Scott started a new job a week or so ago and we had a celebratory meal to ease the nerves a bit. I wanted to make it special, but because it was a day after our crazy garage sale, I also wanted it to be easy. I had shrimp in the freezer, so before church, I took it out, and let it defrost in a bowl of water. After church I made the following marinade and it was a hit! I will definitely do this again!
Toss a pound of shrimp in the following:
1/2 cup (of a handful) of chopped fresh cilantro
1 or 2 chopped jalapenos
1/3 cup sesame oil
1/3 cup white wine (if you have it, if not, perhaps orange juice?)
1 tablespoon grated or minced fresh ginger
1 teaspoon sugar
1 teaspoon salt
1 chopped shallot
Juice of three limes
Refrigerate for a few hours before grilling, tossing the shrimp a few times in the process.
I loaded my shrimp onto soaked wooden skewers and grilled for about 5 minutes (or until pink).
We also grilled corn, zucchini squash and okra, and had a fantastic meal! The sad part? I forgot to take a picture of the finished product!
Regardless, I think Scott was well prepared for day 1 of this job. In our family, all milestones are celebrated with food. And this one was no exception.
