When we traveled to my Meemaw and Pawpaw’s house as children, Meemaw had all of our favorites waiting. I remember her spaghetti, which I think contained about a tablespoon or more of sugar. Good stuff. Megan remembers Meemaw’s 4-layer chocolate dessert. We celebrated Megan’s birthday tonight and she requested that dessert. Boy, is it good.
4-layer chocolate dessert
1st layer
Mix:
2 sticks melted butter
1 cup flour
1 1/2 cups chopped pecans
Press into a 13 by 9 inch pan. Bake at 350 degrees for 15 minutes. Cool completely.
2nd layer
Mix:
8 ounces cream cheese
1 cup powdered sugar
1 1/2 cup cool whip
Spread onto the first layer.
3rd layer
Mix 1 large and 1 small chocolate instant pudding mixes with 4 cups of milk.
Spread onto the dessert.
4th layer
Top with cool whip and grate chocolate on top.
Oh my. It doesn’t meet any organic/whole foods living standard, but it sure does taste like Meemaw’s house. And that is a good thing.
Even Fletcher (in all of his pink-bib glory) liked it.
